The 2021 vintage allowed us to leave a small block of our Pinot Gris to raisin slightly, producing grapes with a very high sugar content. The fermentation was stopped early to achieve a perfect balance of alcohol and sweetness. It's not technically a dessert wine, but more akin to a Vin Santo in style. showing strong pear and apple flavours matched with an underlying raisin character. The palate is sweet and the finish well balanced by good acidity. it makes the perfect accompaniment to a plate of cheese.
